    Chemistry doesn’t add up. A flood of a polar fluid will be the most effective means of dissolving a polar molecule. All you’re doing if you dilute with water is diminish its effectiveness.

    Capsaicin is a wax. It’s not going to dissolve in water. Fat, on the other hand, is a wonderful medium to dissolve capsaicin. The best way to increase the mass transfer rate of capsaicin from your tongue to something else is a fluidlike substance that provides the most contact of a solvent to the helical being dissolved. Diluting it only hurts that transfer especially when the fluid used to dilute is not able to dissolve the substance.

      You realize you're talking to scientists here. You know, people who know what they are talking about. And no, that is not me. I'm the guinea pig.
      Never really developed a taste for tequila. Kind of hard to understand how you make a drink out of something that sharp, inhospitable. Now, bourbon is easy to understand.

          Your entire second paragraph proves my point. Both capsaicin and milk are non-polar, ergo effective transfer.

          EDIT: should clarify: milk is not a pure compound, so it contains both polar (OH bonds) and nonpolar (CH bonds in the fatty acids) elements. The capsaicin, being nonpolar and lipophilic, is attracted to the lipids and dissolved in the overall homogenous fluid.

            Milk is an emulsion or mostly water. Cheese and yogurt are not.
