  • Re: USCHO Cooks: Maybe We Can Beat Bobby Flay

I echo what others have said about ground turkey. The only thing I'll use ground turkey for is something with plenty of seasoning an the ability to add liquid if it is too dry (like taco meat where I can add a little extra water when mixing in seasoning).

Only thing we use it for is Tacos. We used to use it for meatloaf but that didn't last long.

Ground turkey can make good meatballs if you add in zucchini, etc. I often make those to eat with zucchini noodles and home made marinara sauce

        • Ended up putting it in a frying pan with zucchini, bell peppers, diced tomatoes, and seasoned it with salt, pepper, cumin, and oregano. Served it over toasted white rice and topped it with 1/4 cup shredded Parmesan cheese.

And with the other package, I am going to make lentil soup with the turkey and potatoes.

I make a pumpkin chili with ground beef and lentils that is pretty tasty, and I imagine it would still be edible with ground turkey.

Recipe is here, if you're curious.

Making this again today- best minestrone recipe I've found. Good way to get veggies and feel full. I think the tomato basil pesto is a great addition.

Pi Day is coming up. After baking a Black and Blue pie and some strawberry pie bars, I will be down to 2 bags of raspberries, 1 bag of cherries and a small bag of strawberries for baking stuff. Hopefully they'll last until July. Whould've thunk I didn't get enough berries last year????? I should probably get more this year.

Well, the lentil soup with ground turkey, kale, and potatoes did not suck. Wasn't all that great, either. I give it a 6/10.

Anyone have a good recipe for dealing with nappa cabbage? I threw some into a dumpling soup last week, but I still have most of the head left.

Graham crackers were invented to suppress sexual desire.

And Corn Flakes were created by Kellogg for the very same reason.

Probably why I don't care for either food...

My employer gave me a 5 pound piece of corned beef.

I know... slice it thin and Reuben sandwiches for everyone!

Been doing a lot of baking for a tournament this weekend, and was going with the Cinco de Mayo theme. Had a big macaron fail on Tuesday with the rainy weather. Made pan de elote last night, and used frozen corn - should have defrosted it first. It solidified the butter. I had to heat the batter in a double boiler to get the butter to room temp again before I baked it, but I think it worked out OK. I was going to do Tres Leche cake, but realized this morning that we won't have refrigeration. doh! Maybe something churro-related.

Also volunteered to make 12 dozen cookies for charity - here's the list -

                                Salted caramel pretzel thumbprints
                                Nutella chip cookies
Oatmeal raisin snickerdoodles (normally I am anti-raisin, but I'll do it this once)
                                Black forest cookies
Lemon Raspberry pinwheels (couldn't find this recipe online - from KAF's Cookie Companion - basically sugar cookie plus Jello)
                                Chewy Ginger Cookies
