That is true - and proper usage. The St Norbert's Men's Hockey team won the National Championship, but it is not St Norberts College - It is St Norbert College.
It is common to append the apostrophe S to the end of a school or a church named after a saint. I went to an elementary school named St. Gabriel, but everybody called it "St. Gabriel's." Nobody meant any disrespect by it, but that's just what we said. That obviously doesn't mean it's correct, but it it is just a habitual thing.

Place names in the United States don't use apostrophes, with only 5 exceptions, per the United States Board on Geographic Names. I always thought it was weird when I was driving up to school in Geneseo along route 17 and had to go through a village called "Fishs Eddy."
Obviously Martha's Vineyard is one of the exceptions, because, um, Kennedys?

This has mildly annoyed me but I don't get too worked up about it. If I recall it used to be referred to as St. Norbert's College many years ago but then the S was dropped at some point. I'm talking first half of the 20th century, and no that's not a timeframe I personally witnessed to head off the old jokes. Although I highly doubt 30 year old sports guys are doing it as a historical reference from 60+ years ago I do think there was a historical basis for the outdated reference. I looked around and couldn't find any documentation on it. If I come up with something I'll add it.

The New Priest
A new priest at his first mass was so nervous he could hardly speak. After mass he asked the monsignor how he had done. The monsignor replied, "When I am worried about getting nervous on the pulpit, I put a glass of vodka next to the water glass. If I start to get nervious I take a sip."
