I've been having a little spat with a certain tUMD fan about the merits of sauerkraut. So I put it to a vote. So, Do you like sauerkraut....yes or no.....it's that simple.

Bag kind or German restaurant kind = good

Calling sauerkraut rancid is funny, it's rotten cabbage. But you're right, not all rotten cabbage is the same.

Its not rotten cabbage, its salted cabbage. My parents used to make it. Its easy to make and fun to watch it bubble and fume as it pickles. Good stuff

It's a fermentation process. Bacteria is involved. It's rotten cabbage.
From wikipedia: Sauerkraut is finely-sliced white cabbage fermented with lactobacillus bacteria.

Beer is fermented, is that rotten??:). I remember them(my parents) cutting up cabbage, layering it with salt in a large ceramic pot with a lid that fiit inside the pot with a weight on it. As it cured(fermented) it would foam and look real bad. At some point they would can it in ball jars.

There's a huge difference between lactic acid and ethanol. :D

I'm going to Oktoberfest tonight, and I still don't like Sauerkraut. :p I have been known to eat Rotkohl, though. (The other night I had Sauerbraten with Rotkohl and Kartoffelpuffer. Yummy, and even better for lunch the next day.:D)
